I tried a new recipe this week. This one came from my friend Linda, she's such a great cook and we really liked it so I thought I'd share it. Thanks Linda for sharing it with me ! It was yummy and didn't take to long to make, one of those things that can keep cooking and you can empty the dishwasher and fold the laundry while it's simmering! Hope you like it too ! Sausage and Zucchini Pasta
12 oz of pasta (I used bow tie)
1 T. olive oil
1 lb. mild hot Italian sausage, casings removed and broken into ½ inch chunks ( I used the chicken basil sausage in the links from Sprouts that Linda recommended)
2 T minced garlic
½ cup sliced onion
1 zucchini halved and sliced
1 yellow squash halved and sliced
2 medium tomatoes cut into 1 inch chunks (I used some grape tomatoes cut in half)
½ tsp. ground black pepper
2/3 cup freshly shredded parmesan cheese
Cook pasta according to package directions. Drain, return to pot and set aside. Meanwhile in a large nonstick frying pan, heat oil over high heat, add sausage and cook, crumbling as it cooks. Cook thru and transfer sausage to a plate and set aside. In the same pan over high heat, cook garlic, onion and squash until starting to brown, stir in tomatoes, pepper and the sausage and cook until heated thru. Combine that mixture with reserved pasta and toss together, sprinkle with half the parmesan and serve with parmesan sprinkled on each serving.
